How to make crispy chicken wings without deep-frying

Fried chicken or sticky braised chicken wings? The best chicken wing has a crispy exterior but also a sticky sauce that you can unabashedly lick off your fingers afterward. You first bake these wings until crispy in the oven, then toss them in a delicious sweet-and-spicy sauce. If you eat them straight away, the outside stays perfectly crisp too. Best of both worlds.
The trick to ultra-crispy wings without turning on the deep fryer? Good ol’ baking powder. The baking powder changes the structure of the skin as it bakes, making it super duper crispy. Much easier than deep-frying the wings and healthier too, if you care about that.
Method
1. Preheat the oven to 220 °C. Toss the chicken wings with the baking powder and season with salt and pepper. Arrange the wings in a single layer on a baking sheet and bake for 45 minutes, until golden brown and crispy.
2. Meanwhile, make the sauce by bringing the sunflower oil, ginger root, honey, brown sugar, soy sauce, sriracha and lime juice to a boil in a saucepan, then gently simmering for 5 to 10 minutes.
3. Place the chicken wings in a large bowl and pour the sauce over them. Has your sauce only just come off the heat? Use a ladle, as it may be very hot. Garnish the wings with the sesame seeds and spring onion.
