Make Your Own Chocolate Kisses

When we think of winter, we think of spending days in the kitchen cooking and baking. And when chocolate is involved, winter becomes just that little bit more enjoyable.
Method
1. For the cookie dough, beat the butter, icing sugar and salt until light and fluffy using a mixer. Mix in the egg thoroughly. Then immediately add the flour and mix well. Roll out the dough and let it rest in the refrigerator for 30 minutes.
2. Preheat the oven to 175 °C.
3. Cut out the cookies (5 to 6 centimetres in diameter) and place them on baking paper on the baking tray. Bake the cookies for approximately 10 minutes until golden brown.
4. Dissolve the gelatine in 20 grams of cold water and leave to bloom for at least 5 minutes.
5. For the sugar syrup, heat the sugar and glucose syrup with 60 grams of water in a saucepan to 114 °C. Remove the pan from the heat. Cut the gelatine into pieces and mix it into the saucepan together with the vanilla seeds.
6. Degrease a bowl with the cut lemon. Put the egg white in the bowl and whisk until frothy. While whisking, pour in the sugar syrup in a thin stream and whisk until the mixture is lukewarm and firm.
7. Fill a (disposable) piping bag with the filling and snip open the end.
8. Pipe beautiful rounds onto the cookies and leave to dry for 30 minutes. Dip the kisses one by one in the tempered chocolate and leave to set on cling film.
