Recipe: New York cheesecake

A good cheesecake can sometimes be hard to find. Although almost every lunchroom has one on the menu, the quality is far from always what you want. This recipe is basic and always results in a perfect cheesecake.

Base
The perfect cheesecake has a crispy, buttery base. This recipe uses a whole package of cookies; if you want the base to be a little thinner, just sneak a few cookies out of the package so they don’t end up in the cake.

Filling
The filling should be creamy, so really use mon chou and no other type of cream cheese. Mon chou is very high in fat, which is exactly what we want in this cake. The consistency of the filling is extremely important; it shouldn’t taste too much like egg or sink. It should remain in the oven for another 5–6 hours after you turn it off, which makes it perfectly cooked and silky smooth.

How to make a perfect cheesecake
Preheat the oven to 180 degrees. Put the digestives in the food processor and chop until completely crumbled. If you don’t have a food processor, you can also fold the cookies into a tea towel and hit them with a pan or rolling pin until everything is crumbled. A great way to leave the aggression of the entire week behind you.

Bake for ten minutes

Add some of the melted butter to the crumbled cookies and stir until all the crumbs are coated with butter. Add extra butter until it has the right consistency. The crumbs shouldn’t be too wet, but when you press the mixture down it should hold its shape. Spread the mixture evenly over a 24 cm springform pan and press it down. Bake for 10 minutes.

Meanwhile, make the filling by mixing the mon chou with the sugar. Stir in the milk and add the eggs one at a time. After adding the eggs, stir in the sour cream and vanilla. Sift the flour and mix it into the rest of the filling until all the flour has been incorporated. Bake in the oven for 1 hour. Then turn off the oven and leave the cheesecake in the oven for another 5–6 hours with the door closed. Put the cheesecake in the refrigerator and let it cool before serving.
