Preparation
1. Preheat the oven to 200 °C.
2. Heat the butter, milk and 50 millilitres of water in a saucepan. Add the flour and a pinch of salt. Stir until smooth with a whisk. Cook the flour.
3. Remove the pan from the heat. While stirring with a wooden spoon, add the eggs one at a time. Only add the second once the first has been incorporated. Add the cheese and mix well.
4. Line a baking tray with baking paper. Put the dough into a piping bag. Pipe the gougères onto the baking paper. Make sure there is enough space between the gougères.
5. Bake the gougères in the centre of the oven for 15–20 minutes, until golden brown. Let them cool slightly on a wire rack and serve warm.
