6 quick meals for weekdays

Okonomiyaki

What are you cooking tonight? Some people already know in the morning what they’re going to put on the table, but for those who don’t: relax and read on. We’ve listed six dishes that can also be on the table in no time.

Bibimbap

Bibimbap literally means ‘mixed (rice) meal’ in Korean. You can add virtually any vegetables and meat you like. In the recipe from Instock’s cookbook, fermented vegetables, spring onion and pickles are used, but you can also replace these with, for example, broccoli, grated carrot and pumpkin.

Okonomiyaki

We already told you here about this savoury pancake from Japan. The base is almost always the same, but you can vary the toppings endlessly. Raid your fridge and use up all your leftovers.

Carbonara

Robert Kranenborg can’t get enough of pasta carbonara and makes it in the most traditional form with guanciale, egg and Parmesan. You won’t often find guanciale (pork cheek) in the supermarket, but you can buy it at a speciality shop, such as Brandt & Levie or L’amuse on Stadionplein in Amsterdam. Can’t find pork cheek? Just use pancetta.

Tortelloni with pea purée

One of the handiest kitchen shortcuts according to Denise Kortlever: turn wonton wrappers into stuffed ravioli, perle or tortelloni in no time. The wafer-thin Asian pastry sheets (available at Asian supermarkets and large supermarkets) are ideal for filling like Italian pasta.

Thai Penang curry

Penang curry is made with red curry paste to which you add roasted peanuts. This makes it a fairly mild curry with a nutty and creamy flavour. Like most other curries, you can eat Penang curry with chicken, beef, pork or fish; we’re going for chicken.

Saltimbocca alla romana

The Parma ham and sage give this dish loads of flavour, but it has a very short preparation time. Coat a veal schnitzel thinly with flour, pepper and salt. Place Parma ham and sage on top and secure them with a cocktail stick. Fry very briefly on both sides and deglaze with white wine and lemon juice. Delicious with spinach.
