Dry chicken? Never again with this tip

A whole roasted chicken from the oven is a dish every home cook should master. The only tricky part is that the breast is often already dried out before the legs are cooked through. With this trick, you’ll make sure the breast stays juicy too.

All you have to do is spread butter under the chicken’s skin. The butter melts and keeps the chicken juicy. You can also baste the chicken with the fat that collects in the roasting pan during cooking. Season the butter with herbs, garlic, spices or whatever you like for an incredibly juicy and flavorful chicken. Win-win.

Let the butter come to room temperature so it becomes nice and soft. Knead in the herbs and anything else you’re using (don’t forget the pepper and salt), then tuck it under the chicken’s skin. One of our favorite combinations is garlic, thyme and rosemary. But if you want to keep things simple, tarragon is also a safe option. Tarragon and chicken were made for each other.
