Goodbye Blue Monday

Mac 'n Cheese

Mondays are always a little difficult, whether it’s Blue Monday or not.

Blue Monday was invented in 2005 by British psychologist Cliff Arnall. He developed a formula showing that Blue Monday is the most depressing day of the year for people. The days are short, the holidays still seem a long way off and good intentions turn out to be harder to maintain than expected. Meanwhile, a group of scientists has heavily criticised Arnall’s work because the formula is said to be too vague. In any case, Blue Monday has become a household name. If you suffer from it or simply have a bad Monday, we’ve listed five recipes that will make even the worst day of the year a good one.

Mac & cheese

Cheese is the solution to everything, including Blue Monday. So make this Fleetwood Mac and Cheese with Cheddar and cauliflower.

Indian fried chicken

With this fried chicken Indian-style, you’re guaranteed to get the boost you could really use today. Another advantage: no compromise on flavour, while the preparation time is reduced.

Sweet potato cheesecake

A few bites of this sweet potato cheesecake with a thick layer of ganache and you’ll have forgotten that Monday slump.

Chili con carne

Or make this next level chili con carne with braised beef, chipotle peppers, red chilli and chilli flakes. It’ll warm you right up.

Peanut butter and banana toasted sandwich

If you can’t face spending a long time in the kitchen today,  Nigella Lawson’s peanut butter and banana toasted sandwich is the answer.
