3x tequila cocktails for your honey

Mexicans never do a shot of tequila, so why should we? You’re better off turning it into a seductive cocktail to really enjoy. And for that little bit of extra TLC, make it with a honey tequila.

1. The Beekeeper
What you need
30 ml Cazcabel Honey Tequila
30 ml soda water (sparkling water, e.g. Sanpellegrino)
7.5 ml Monin Spicy syrup
7.5 ml Monin Ginger syrup
25 ml lime juice
15 ml egg white
1 dash absinthe
3 dashes Peychaud’s Bitters
ice cubes
How to make it
‘Dry shake’ all the ingredients. Because when shaking with egg white, you do so without ice. Then ‘wet shake’ everything once more, this time with ice. Use a small cocktail strainer (a ‘fine strainer’) to pour your cocktail into a Collins glass. Top with soda water. Want to really impress your girl? Go all the way and garnish with beet chips and a raspberry (or raspberry powder).

2. Honey’s Bee’s Knee’s
What you need
50 ml Tanqueray Gin
15 ml Cazcabel Honey Tequila
10 ml thyme syrup*
20 ml lemon juice
2 dashes Regans 6 Orange Bitters
ice cubes
How to make it
To add the flavor of thyme, it’s best to let the leaves infuse in syrup. Start by making the thyme syrup (preferably a day in advance). Blanch 12.5 grams of fresh thyme sprigs in water for 30 seconds. Remove the sprigs with a colander and transfer them to ice water. Then combine the sprigs with 250 ml water mixed with 500 grams brown sugar. The longer everything infuses, the stronger the thyme flavor.
Shake all the ingredients well with ice, and strain into a chilled coupe glass. NB. You use the strainer (the tool you place over the open part of your shaker) to prevent the ice from being poured into your cocktail.

3. Don’t mess with my honey
What you need
25 ml Cazcabel Honey Tequila
25 ml Mescal
20 ml pineapple juice
25 ml lime juice
15 ml Monin Orgeat syrup
2 dashes Angostura bitters
How to make it
Shake all the ingredients well in a cocktail shaker. Double strain into a chilled coupe glass. NB. When double straining, you use a small strainer in addition to a strainer when pouring.
