Fake scrambled eggs

Just like any other hotel professional, I’m well aware that some products in a hotel kitchen come from a packet. I understand the stock and bags of frozen fruit for smoothies, but when I saw a carton of egg yolk standing there, I picked it up with some concern. ‘It’s used in a lot of kitchens. It’s handy for making desserts, and that way you don’t waste any egg whites,’ said the chef at the school restaurant. Followed by: ‘You don’t want to know what other egg products are used ready-made!’

Of course, I did want to know—and guess what?! Those steaming scrambled eggs aren’t made fresh at all. Far from it, actually. The stuff almost always comes from a packet. The ready-made powder is mixed with water until it reaches the ‘right consistency’ and then heated in the oven. As you can imagine, I was—and still am—stunned that the chef told me. Because scrambled eggs from a packet, of course, go against ALL the principles.

Still want an egg with your breakfast? Take a boiled egg from the buffet and wait until you’re back home for your scrambled eggs. Because making scrambled eggs yourself is a thousand times better—and above all, tastier.
