Brilliant and insanely delicious! How to make a Korean egg sandwich in a cup (perfect for on the go!)

Guys, we’ve come across something really fun! A trip to South Korea is definitely high on our wish list, so we can eat our way around the country. Kimchi! Bibimbap! Drinking soju! And every day, we’d start with a hearty breakfast, namely this amazing sandwich:

Because, as the chef in this video from Munchies shows us, this is a South Korean breakfast that really means business, complete with a solution for any mess! Namely, by stuffing the whole thing into a cup; brilliant. And if a trip to Korea isn’t on the cards just yet, this dish is easy to recreate at home. Just try watching this video without immediately wanting to run to the kitchen; good luck!
How to make gilgeori (Korean street toast) with egg
- In a small bowl, mix the eggs with two-thirds of the cabbage, 1 tablespoon of sugar, salt, onion and spring onion.
- Melt the butter in a frying pan over medium heat.
- Pour the egg mixture into one side of the pan, using a spatula to keep it on that side.
- Cook for a few minutes until you can fold it in half.
- Place the cheese on the folded ‘omelet’.
- Let the cheese melt while you toast the bread in the pan.
- Butter both sides of the bread and place the two slices in the pan next to the egg.
- Let the bread turn nicely brown on one side, then flip it over.
- Sprinkle another tablespoon of sugar over the melting cheese.
- Add a little ketchup and mayonnaise (here too, Kewpie mayonnaise is recommended!) to the omelet and place the remaining cabbage on top.
- Place the bread on a piece of parchment paper (slightly larger than the slice of bread), carefully scoop the egg onto it and cover with the second slice of bread.
- Carefully fold it in half (with the paper), place it in a mug or cup and you’re ready to go!
