At the bottom of this quick chicken and halloumi dish is a wonderfully sweet, lemony herb sauce for dipping every bite into.

How to make the chicken with burnt lemon and halloumi

  • Preheat the oven to 220 °C.
  • Place the marjoram and lemon wedges on a large baking tray lined with baking paper and drizzle with oil.
  • Place in the oven for 20 minutes or until the lemons develop blackened edges.
  • Add the chicken breasts and turn them so they are coated all over with the juices from the baking tray.
  • Place the halloumi on top and drizzle with honey.
  • Sprinkle with salt and pepper and bake for 12–15 minutes or until the chicken is cooked through.
  • Divide the spinach between four plates and place the hot chicken, halloumi and lemons on top so that the spinach wilts slightly.
  • Spoon the juices from the baking tray over everything and serve.

Tip: this chicken is delicious the next day on a baguette.
