Chocolate cake with Guinness beer

Feeling a little stuck in a cooking-and-baking slump? This cake will get you out of it with a good kick up the backside. Of course, it doesn’t taste like beer, but the special batter becomes wonderfully light and rich thanks to the Guinness. Dessert, lunch or (why not) breakfast: this cake will brighten your whole day.

How to make chocolate cake with Guinness

  • Preheat the oven to 175 degrees.
  • Grease a 22 by 33 centimetre baking tin and have it ready. Line it with baking paper, letting it overhang slightly at the sides.
  • Mix the flour, cocoa powder, baking soda, baking powder, salt and sugar together. In another bowl, mix the eggs, oil, milk, vanilla extract and Guinness together. Gradually mix the wet ingredients into the flour mixture. Once the batter is combined, turn the mixer up a little and keep beating until the batter has become a homogeneous mixture.
  • Pour the batter into the tin. Tap the cake tin on the worktop a few times to get rid of any large air bubbles. Bake the cake for 30 to 35 minutes until done; test it with a skewer. Let it cool completely in the tin.
  • Once the cake has cooled to room temperature, you can remove it from the tin. Make the icing by mixing the ingredients together, then spread the icing over the cake.
  • Store the cake in a large Tupperware container in the fridge; it will keep for a few days. Eat it at room temperature.
