Don Papa rum is named after Papa Isio, the Filipino revolutionary who once drove the Spanish occupiers from the island of Negros (also known as Sugarlandia). Independence was celebrated with a healthy dose of rum, of course.
What exactly is rum again?
Rum immediately puts us in a festive mood too (which is why, besides sour cream, I always add a generous splash of rum to my banana bread – 2 free tips). To refresh your knowledge: rum is made from the leftovers of sugar cane, such as sugar cane juice or molasses. This is diluted with water, then fermented and distilled. How to make a Darker Don cocktail
You need the ingredients below for 1 cocktail. Use a cocktail shaker to mix all the liquids and pour everything into a highball glass.
- 45ml Don Papa rum
- 100ml ginger beer
- 5ml lime juice
- 1 drop Angostura bitters
- for garnish: a slice of (Calamansi) melon and a sprig of mint.
