Delicious and easy Caesar salad

Bloeme: ‘When I host a dinner party at home, the question is often not whether I’ll make a Caesar salad, but which variation will be served. If there are lots of other delicious dishes, I make a ‘stripped-down’ version with just little gem, anchovy dressing and Parmesan. If I want to serve the salad as the main event, I make this Caesar-ish salad with green beans. The green beans, dressing and eggs turn it into a complete meal that’s just as crisp and fresh as the original.’

How to make a Caesar-ish salad with green beans
- If using dried beans, start by soaking and cooking the beans. Allow the beans to cool slightly before continuing with this recipe.
- Place the cashews in a bowl of water and soak for at least 15 minutes.
- Bring a pan of plenty of water with a generous pinch of salt to the boil. Cook the eggs for approximately 6 minutes, until soft-boiled. Remove them from the cooking water with a slotted spoon and set aside.
- Blanch the green beans in the same water for approximately 3 minutes, until al dente. Drain, rinse under cold running water and set aside.
- Drain the cashews. For the dressing, use a food processor or blender to blend the white beans with the cashews, mustard, anchovy fillets, Parmesan, the zest and juice of the lemons, the garlic and basil until smooth. If the dressing is too thick, add a splash of water. Taste and season with salt and pepper.
- Separate the leaves of the little gems. Toss the lettuce in a large bowl with the green beans and dressing. Add the croutons just before serving and mix them in well.
- Spread the salad over a large serving platter. Garnish with quartered eggs and extra anchovy fillets. Grate plenty of extra Parmesan over the top and serve immediately.
