Delicious and fun: how to make falafel macarons

How to make falafel macarons
The ingredients are based on eight pieces. Instead of eight small macarons, you can also make four large ones. Delicious as a burger or as the base of a luxurious salad starter. You can shape the falafel balls more easily if you first place the mixture in the refrigerator for 30 minutes.
Preparation
1 Place the chickpeas, onion, garlic, coriander leaves, flour, baking powder, fennel and cumin seeds and pul biber in the food processor and pulse everything into a cohesive mixture. It does not need to be completely smooth; it is actually delicious when it still has some texture. Taste and season with salt and pepper.
2 Slightly wet your hands and shape 16 balls from the falafel mixture. Press the balls slightly flatter.
3 Heat the olive oil in a frying pan and fry the falafel burgers for 10–15 minutes until golden brown all over and cooked through. Roll them in the dukkah and leave them to cool completely.
4 Meanwhile, prepare the filling: mix the goat’s cheese or labneh with the cream. Transfer to a small piping bag.
5 Spread the apricot jam over 8 falafels, pipe the goat’s cheese cream on top and place another falafel on top. Arrange them on a beautiful serving platter and garnish with the cress.
