Drinking Cocktails in a Vault

Entering a vault without a balaclava and being rewarded with a cocktail placed in your hands. It sounds like a drunken version of Casa del Papel. But at Vault Bar, it’s actually possible.

Winning a prize for the most beautiful cocktail bar in Amsterdam isn’t easy, because there are quite a lot of them. But Vault Bar, located in the Waldorf Astoria, certainly ranks among the top three. The bar is housed in an old bank vault; the hotel once served as the headquarters of a private bank. The still-intact safe-deposit boxes fire the imagination, as does the cocktail menu: a wallet containing cocktails designed in the form of international banknotes.

Jenever as the base
The new cocktail menu features surprising creations based on traditional Dutch jenever. The drink, perhaps you’ve already noticed, is making a huge comeback. First as a kopstootje, now as the base of cocktails. At Vault Bar, all varieties are used, from jonge to oude jenever and korenwijn.
With matching bites
Meric, Vault’s French bartender, used these ingredients to create an exceptionally delicious cocktail journey through Europe. From a Spanish cocktail with Oloroso sherry, watermelon and ras el hanout to a German cocktail incorporating herbal bitters and elderflower. The accompanying bites (rye bread with herring and chive mayo! Lollipops with goat’s cheese and black garlic!) come from the kitchen of Sidney Schutte.
