Finally! Restaurant NOBU is coming to Amsterdam

In 1994, the very first NOBU restaurant opened its doors in Tribeca, New York. Thirty years later, the time has finally come: NOBU Amsterdam is on its way, and that’s big news. Not only because this culinary superstar with Japanese and Peruvian roots is finally setting foot on Dutch soil, but also because it comes with a full-blown lifestyle package: two luxury towers, a high-end hotel experience, and, of course, the famous restaurant.

NOBU Amsterdam isn’t just another new restaurant. It’s the flagship of Nobu Hospitality, the luxury brand founded by chef Nobu Matsuhisa, actor Robert De Niro, and film producer Meir Teper. The restaurant is part of the prestigious Nobu Residences Park Meadows Amsterdam project, a massive development on the Beatrixpark in Amsterdam-Zuid. Next to the Zuidas. So that means wagyu after your Zoom call—well, if you’re a fast-moving hedge-fund boy.

The two towers—one with condominiums, the other with rental apartments—won’t just have a lobby where you can sip espresso all day in a Piet Boon designer armchair, but also a NOBU restaurant where you can eat black cod miso among expats and culinary connoisseurs with Instagram accounts full of sushi close-ups.

And because it can all be just that little bit more decadent: residents get access to a spa, gym, and catering from the restaurant. Cravings at 11 p.m.? Sushi at your door. In your pajamas. In a penthouse. You’ve got to do something with your crypto profits, right?
What makes NOBU Amsterdam so special?
For NOBU virgins: NOBU isn’t just any Japanese restaurant. It’s the perfect balance between culinary spectacle and stylish serenity. Chef Nobu Matsuhisa once blended Japanese precision with the explosive flavors of Peru, where he worked for years. The result: refined dishes featuring umami, acidity, and fire. Think: sashimi with jalapeño, squid pasta with a light garlic sauce, rock shrimp tempura, and, of course, the famous black cod. In other words: dishes from Nikkei cuisine. The kind of food that spontaneously leaves you speechless (unless, of course, you’re sharing it on Instagram).

Sergio Herman is a fan
We asked Michelin-starred chefs where they like to eat themselves. Sergio Herman, as you might have guessed, likes going to NOBU. Luckily, there’s also a NOBU on his favorite island, Ibiza, where the restaurant is part of the luxury Nobu Ibiza Bay hotel. As it should be, it’s not next to a busy club, but on serene Talamanca Bay, among the bobbing yachts.
Completion in 2027 (but you can start saving now)
Sales will start later this year, with completion planned for 2027. So yes: it’ll be a while before you can sink your teeth into that spicy tuna crispy rice overlooking Beatrixpark, but hey: that gives you a few more years to increase your salary, find a Sugar Daddy (or Mommy), or win the lottery.
According to the CEO of Breevast, the property developer, this is a milestone. And honestly: the branded residences concept is new to the Netherlands. In cities such as Miami, Dubai, and London, these kinds of high-end residential towers with hotel services are already the norm. Now they’re coming here too.

Black cod miso: here too
You can also eat that incredible black cod miso at other places in Amsterdam by now. I recently had an amazing black cod miso at Jondani (believe me; everything here is that delicious!). And at Taiko at the Conservatorium Hotel, they also serve an excellent black cod miso. Schilo’s signature dish of miso-marinated black cod is the silkiest fish I’ve ever tasted.
