From the Airfryer: Pão de queijo (Brazilian cheese balls)

Seriously? The Airfryer is your best friend. From a chocolate moelleux to super-crispy pork belly, anything is possible. Our latest favorite is Pão de queijo (Brazilian cheese balls) from the Airfryer. Vary them endlessly and try adding some garlic, red pepper or diced ham too.

Brazilians eat pão all day long. And we understand that in the editorial office, because we love cheese. The ingredients for Pão de queijo are tapioca flour, egg, cheese, oil and milk. Tapioca flour is made from cassava root and gives the bread its firmness. The cheese, preferably Parmesan or cheddar, creates the creamy center together with the milk. They range in size from golf balls to large tennis balls, so make them as small or large as you like (we prefer small balls).
How to make Pão de queijo (Brazilian cheese balls):
- Put the milk, cheese, oil and eggs in a pan and bring them almost to the boil while stirring (do not let them boil).
- Mix the salt into the tapioca flour, then add the warm mixture to the flour.
- Knead it by hand into a dough or use your food processor.
- Shape small balls from the dough and cook them in your Airfryer at 160 degrees for 13 minutes.
