But for the best spareribs, we have to go to Tiel. ‘The absolute best spareribs I know are those from Israeli restaurant GAIA in Tiel. Famous throughout the wider area,’ says Lindsay. ‘You won’t be disappointed. Don’t expect anything from the rest of the menu (or the interior); people come solely for the divine spareribs that fall off the bone and don’t have some standard “Jack Daniels” or kecap glaze.’
