How to: get more out of your jar of mayonnaise

There’s not much better than a generous scoop of soft, creamy mayonnaise. Preferably with a hint of lemon too, and then a lovely generous dollop on the edge of your plate that you can dip fries, fish fingers, hell, even radishes and other raw vegetables into to your heart’s content. But you can do so much more with mayo. Make the very best toasted sandwiches, for example.

At home, I hardly make a sandwich without it, and we get through jars at a blistering pace. But apparently there are people who take so long to finish a jar that it starts approaching its expiration date, and who aren’t quite sure what else you can do with mayo. For all those people, and actually everyone, here are a few tips:
Brush it on
You can brush a thin layer of mayonnaise onto salmon, chicken, or meat, but also onto vegetables. This helps prevent sticking, while also locking in flavor and juices before you grill, bake, or roast.
Fluff it up
Earlier, we shared the mindblowing cream-cheese-in-your-eggs trick, but did you know it works with mayonnaise too? Whisk 1 tablespoon of mayo per 2 eggs, and you’ll get the same cloud-like effect.
The pan-toasted sandwich we can’t stop talking about
In my kitchen, we spread a good layer of real butter on the outside, but some people think mayo works like a toasted-sandwich train here. They say it makes the grilled cheese crispy, rich, and slightly fresh.
