How to make a sushi cake

If you’re not really a sweet tooth, but you have a festive occasion coming up; this is what you want to make. For example, if it’s your birthday but a red velvet cake isn’t really your thing, I think you’ll make yourself (and your guests) extremely happy with this. A sushi cake. Sounds amazing, right?!

I found this recipe on SterkInDeKeuken, it looks very delicious and judging by the recipe, even I could make it — so you don’t have to be a chef for this sushi cake.

Make this sushi cake in 7 steps

Well, seven… I do it in a few less, because I make it extra easy for myself and simply use ready-made sriracha mayonnaise. But if you want to make it completely from scratch , follow these seven steps.

Step 1
Make sriracha mayonnaise by mixing the sriracha sauce and mayonnaise together, then put it in the fridge.

Step 2
Cook the sushi rice as indicated on the packaging, then let it cool. Next, heat the rice vinegar and dissolve the sugar and table salt in it — afterwards, add the rice and mix everything well. Finally, add the sesame seeds and mix until all the sesame seeds are evenly distributed.

Step 3
Remove the bones from the salmon by flaking it apart. Then mix the flaked salmon with the sriracha mayonnaise, pepper and salt.

Step 4
Place baking paper on the bottom and against the sides of the springform pan. Cover the bottom with 1/3 of the sushi rice and press it down firmly. Then cover the rice with half of the salmon. Add one layer of cucumber slices on top. Repeat these steps once more, finishing with the remaining rice on top.

Step 5
Remove the avocado pit by cutting the avocado in half, and remove the skin as well. Then cut the avocado into slices as thin as possible, but don’t separate them yet. Only do this at the end, once you have cut all the slices. By carefully pushing them apart (but not completely away from each other) and then rolling them up, you create the beautiful shape. Sprinkle some lemon juice over it so the avocado doesn’t discolour. Place this shape on the cake and add some pepper on top.

Step 6
Finish the cake with dollops of sriracha mayonnaise, crumbled wasabi nuts and rings of spring onion.

Step 7
Serve the sushi cake with soy sauce and, if desired, wasabi.
