To achieve a cake of decent height, you’ll first need to get seriously baking. Therefore, put several pans on the heat at the same time so you can bake 3 or 4 crêpes simultaneously. Extra top tip: use a blender to make the crêpe batter. This way, you can be 100% sure that the batter is completely lump-free!
How to make the tiramisu crêpes cake
- Put the eggs together with the sugar and flour in a bowl and mix until smooth.
- Then gradually add the milk while stirring (you can do this in the blender) and finish with the oil.
- Heat a pan until it is hot enough. Use a little oil when baking the first crêpes. You won’t need any for the others, as the batter already contains oil, which prevents them from sticking.
- Bake the crêpes until golden brown on both sides. Make sure you have 30 crêpes for the cake.
- Put the cream cheese, condensed milk and espresso in a bowl and mix until the cream is smooth and even.
- Then add the whipped cream and beat until light and airy with a mixer. Set aside 100 grams of the cream for the outside of the cake.
- Use a springform pan to assemble the cake. Start with a crêpe, spread a layer of cream on top and sprinkle with cocoa powder. Repeat until you have used all the crêpes and cream.
- Then refrigerate the cake for 24 hours.
- To serve, turn the cake upside down onto a plate so that the bottom becomes the top, and remove the springform pan.
- Now spread the remaining cream over the sides and top and sprinkle some cocoa powder over the cake.
