How to make Gordon Ramsay’s classic cheeseburger

If today isn’t BBQ weather, it soon will be, honestly—and then you’ll really be doing yourself (and your friends) a favor by making Gordon Ramsay’s burgers for once. Big, juicy, on a deliciously toasted bun; this is what you want!

Gordon makes a classic cheeseburger with the addition of a substantial slice of grilled onion, which he thinks goes better with a hamburger than the acidity of raw onion. And we can only say: this looks absolutely fantastic, something you want to bite into immediately.
How to make Gordon Ramsay’s classic cheeseburger
- Shape the patties from meat well seasoned with salt and pepper (ask your butcher for the perfect blend) and a little egg, the night before. Gordon does his own thing here too, because ‘our’ BBQ master Jord Althuizen specifically tells you not to season the meat with salt in advance…
- Refrigerate them covered overnight so they become firm and won’t break apart on the grill or BBQ.
- Bring them to room temperature before grilling.
- Make sure you have everything ready and can work quickly.
- Then drizzle some oil over the burgers and rub them with it.
- Also roll the outer edges of the burgers (on their sides) through salt and pepper.
- Place them on the hot BBQ and try not to touch them for now so they stay intact.
- Put the lid on the BBQ.
- Drizzle the cut-open buns with some olive oil and place them next to the burgers, cut-side down. G likes to toast both sides of the bun.
- Drizzle the onion slices with olive oil and season with salt and pepper.
- Place them on the grill (again, with the lid on).
- After 3 minutes, flip the burgers and brush a little butter onto the side that is now facing up.
- Remove the buns from the grill and start assembling: spread with mustard mayo, tear and fold a lettuce leaf so it fits nicely on the bun, and place a slice of tomato on top.
- Add another dollop of mustard mayo on top.
- Flip the burgers again after about 3.5 minutes.
- Place the cheese slices on the burgers and cover again.
- After about 30 seconds, remove the patties from the grill and carefully place them on the buns.
- Top with the grilled onion, cover with the top half of the bun, and enjoy!
