How to make champagne watermelon mimosas
Hollow out a watermelon and purée the watermelon cubes in a blender until smooth.
Strain the watermelon through a sieve, or use a colander lined with a tea towel. Add the juice of the two limes and the agave syrup.
Mix the watermelon juice with champagne. Always start with equal parts and adjust the quantity to taste.
Pour the drink back into the hollow watermelon (that looks festive!) or serve in glasses.
