How to make the tastiest smashed potatoes from the oven

Oh my, this is absolutely delicious: beautiful little potatoes, skin on, cooked until perfectly crispy in the oven with such a wonderful layer of melted Parmesan cheese on top. And you even get to give them a good bash! Hold me back, because I’m capable of polishing off an entire baking dish like this before it even reaches the table…

How to make crispy cheesy garlic potatoes
- Preheat the oven to 220° C.
- Boil the potatoes in a large pan of plenty of boiling water for approximately 10 minutes, until just tender.
- Drain and tip onto a baking sheet with raised edges.
- Pour the melted butter over the potatoes, along with the garlic and thyme.
- Shake or toss gently.
- Take a jam jar with a clean outside and use it to flatten the potatoes (but not completely).
- Season with salt and pepper, and sprinkle the grated cheese over them.
- Place in the oven and roast for approximately 25 minutes, until the underside of the potatoes is crispy and the cheese has melted to a golden brown.
