Do you know what really gives baristas and bartenders a stomachache? People who order an iced coffee, then add a splash of sugar, stir for minutes and end up with a watery cold coffee and a layer of sugar crystals at the bottom. Or someone who wants to sweeten a cocktail and thinks a spoonful of sugar will do the trick. Spoiler: it won’t.

The secret to an evenly sweet drink, whether it’s an iced coffee or a cocktail, is simple syrup.

Simple syrup: the secret behind perfect iced coffee and cocktails

The last thing you want is to wait for solid sugar crystals to dissolve in a cold drink. Simple syrup is a liquid, sweet solution that mixes directly into your drink, regardless of the temperature. The result? A perfectly balanced iced coffee or cocktail without crystals and without the hassle.

Making simple syrup yourself: it couldn’t be easier

Just a few simple steps, and you’ll have a supply you can use for weeks. For the classic version, use 1 part sugar to 1 part water. Heat this over medium heat in a saucepan, stir occasionally, and once the sugar has completely dissolved, turn off the heat.

Want a thick syrup for cocktails with lots of ice, for example? Use a ratio of 2:1 sugar to water. Let it cool, pour it into a sealable bottle and store it in the refrigerator. The thicker the syrup, the longer it will keep.

Smaller is better

A small quarter-liter bottle is often enough. More is inconvenient, and less makes the effort hardly worthwhile. Tip: you can freeze any surplus in an ice cube tray, which is ideal for quick drinks later.

Instant simple syrup for emergencies

Don’t have time to wait for the syrup to cool? No problem. Use the blender method: blend the same sugar-to-water ratio for one minute, then let it sit for another minute. Voilà, instant simple syrup, ready for your whiskey sour or summery iced coffee.

You can shake that simple syrup right in!

The perfect balance for every drink

It’s clear: with homemade simple syrup, you’ll always have a deliciously sweet drink, without the mess or sugar crystals at the bottom. Ideal for:

In short: simple syrup helps you get the most out of your drinks, without making yourself—or bartenders and baristas—nervous.
