That simple crowd-pleaser: the banana. All you need, seriously. Well, and a food processor. But other than that: ridiculously easy. Fresh and creamy and healthy at the same time! You’ve probably bought kilos for banana bread, banana waffles, banana everything, and now you can get started on banana ice cream!

How to make pure banana ice cream

  • Cut 2 ripe, soft bananas into about six pieces. It doesn’t really matter how thick they are exactly, as long as they’re all more or less the same thickness.
  • Put the pieces in an airtight container and place them in the freezer for at least two hours.
  • Put the pieces in the bowl of the food processor with the chopping blade.
  • Use the pulse button and start chopping finely.
  • Watch the bananas become crumbly at first, in little pieces.
  • Don’t panic, it’ll be fine.
  • Use a suitable soft spatula to scrape everything from the sides back down.
  • Now switch the machine ‘on’.
  • Keep blending; the mixture will probably now look like oatmeal, with a few pieces of banana still left.
  • Stop again briefly and scrape everything down.
  • Keep going for a little longer and suddenly: ICE CREAM! The transformation from ordinary mashed banana to a fluffy mixture resembling soft serve; amazing.
  • Leave it running for a few more seconds to whip in a little extra air, then switch off the machine.

Your mixture will probably still be a little runny now, but it will already be lovely and fluffy and creamy. You can eat it straight away, or put it in the freezer for a little while in that airtight container. It will firm up again. You can also go wild with extra add-ins, now that you’ve discovered the fun of ice cream made with genuinely just one ingredient. Add them during the final few seconds while the machine is running. Chopped nuts, for example, or a spoonful of Nutella, or chocolate pieces, or salted caramel… Oh, it’s already so much fun as it is—and imagine what else this party could become!
