Make these potato croquettes with Parmesan cheese in the Airfryer

Potato croquettes + Parmesan cheese: that’s truly a combination to be very happy about. And you can make them perfectly in the Airfryer (it’s absolutely incredible what you can make in the Airfryer anyway, from a chocolate moelleux to super-crispy pork belly). So go ahead and switch on your Airfryer!

How to make potato croquettes with Parmesan cheese:
- Boil the diced potatoes in a pan with a layer of boiling water and some salt for 15 minutes, until tender. Drain the potatoes and mash them finely with a potato masher. Or mash them with a potato ricer. Leave the mashed potatoes to cool slightly.
- Mix the egg yolk, cheese, flour and chives into the mashed potatoes and stir everything into a firm mash. Season with salt, pepper and nutmeg.
- Preheat the AirFryer to 200 °C. Mix the oil into the breadcrumbs and keep stirring until the mixture is loose and crumbly again.
- Shape the mashed potatoes into 12 croquettes and roll them through the breadcrumbs until they are coated all around.
- Place 6 croquettes in the basket and slide it into the Airfryer. Set the timer to 4 minutes and fry the potato croquettes until crisp and golden brown. Then fry the remaining potato croquettes.
