Make this super-fast chocolate cake

All well and good; Red Velvet cake, cheesecake, or macarons for the more advanced among us. That is, when you feel like pulling out all the stops and have at least an hour to spare. But sometimes you just want to be sitting on the sofa within five minutes with something decadent and wonderfully chocolatey.

Enter: the ‘mug’ cake. That’s nothing more than a cake you make in a mug, and let’s be honest – something you make in such a humble coffee mug can’t be complicated, right? Exactly! This recipe from Half Baked Harvest can be whipped up in five minutes. Or pinged, since you make it nice and quickly in the microwave! Tip: make sure you have a small leftover amount of coffee on hand; a tablespoon is enough.

How to make the quick (but incredibly delicious) coffee-mug chocolate cake

  • Melt the coconut oil in a large microwave-safe mug or cup.
  • Whisk in the egg together with the milk, vanilla and honey.
  • Add the flour, cocoa, baking powder and salt and stir until just combined.
  • Pour the spoonful of coffee into the centre and stir gently, but not until it has been completely incorporated.
  • Place the chocolate shavings in the centre.
  • Microwave for 1 minute 45 seconds on the highest setting; your microwave may need 2 minutes or a few seconds longer, so keep an eye on it.
  • Eat or serve immediately, and definitely add another scoop of vanilla ice cream!
