New Dutch cabbage for sale: pointed Savoy cabbage

We love pointed cabbage. It’s delicious in a salad because of its texture and sweet flavor. But pointed cabbage is also indispensable in okonomiyaki, in soto ajam and in a vegetarian rendang. And now there is a new pointed cabbage grown on Dutch soil. The pointed Savoy cabbage is a true seasonal product. What kind of pointed cabbage is this and how can you best use it?

According to Joris de Boer, a grower for The Greenery, the new pointed Savoy cabbage combines the best of two cabbages in one. The distinctive pointed shape and mildly sweet flavor of pointed cabbage, but with firm leaves and a tough rib, providing a delicious crunchy bite. Versatile, tasty and very healthy too: the cabbage is packed with fiber, vitamins and minerals.

“We’ve been growing pointed cabbage for years. And when I first saw pointed Savoy cabbage, the product immediately reminded me of snacking tomatoes: a new product derived from an existing product, but with even more flavor. It’s bound to be a hit!”, says the enthusiastic grower. What’s the best way to use Savoy cabbage? This cabbage is known for its strong earthy cabbage flavor, which becomes slightly sweeter when briefly boiled, stir-fried or blanched. Ideal for stir-fries, or for roasting to give it an extra bite.

Buying pointed Savoy cabbage
Pointed Savoy cabbage is a seasonal vegetable, available from October through December, and sold at a select number of (larger) Jumbo supermarkets. Buying pointed Savoy cabbage? Make sure the cabbage feels firm and that the leaves are a beautiful green without brown edges, as this affects its shelf life and quality. Store it in the vegetable drawer of your refrigerator, where the temperature and humidity are ideal for preserving its freshness.
Cleaning and preparing
First remove the outer leaves, especially if they are damaged or discolored. Then cut off the thick, tough stem at the bottom of the cabbage. Rinse the loose leaves under cold running water. You can also soak the leaves in a bowl of water for a few minutes. Let the leaves drain or pat them dry. Then cut them into short strips and stir-fry for about five minutes. It’s also delicious to grill the pointed Savoy cabbage in the oven (halved: 12–14 minutes per side). Another tasty option: as a topping on flammkuchen.
