Sichuan is without a doubt one of my favorite Chinese provinces. The cuisine is known for its searing heat from the numbing Sichuan pepper. If one of those ends up between your teeth, you won’t be happy. What will make you very happy, though, are the wonderfully vibrant flavors, which still come through beautifully alongside all that spice.

Bright red sauce

At China Sichuan Restaurant in Amsterdam, all the favorite Sichuanese dishes are on the menu. Mapo tofu, noodles in a typically bright red sauce and braised eggplant. The spicy dumplings are the perfect starter to get used to the fact that your mouth will be on fire here for the entire meal.

One dish is more than enough for one person. If two of you share some dumplings, a portion of spicy noodles and a main course, your stomach will be nicely filled for less than €20.

Chinese-style service

Fun detail: the service is also very Chinese. When taking our order, we were told that it might take a while because the chef was eating. When I subsequently lost track of the waitress, I later found her at a restaurant table, with a very large plate of food in front of her. I felt completely transported back to China for a moment.
