Recipe: alcohol-free Happy Toi cocktail

How to make the alcohol-free Happy Toi cocktail
- Fill the rocks glass with ice cubes.
- Pour in the lemon juice and bay leaf & sage syrup.
- Top up with the Crodino.
- Stir everything briefly and garnish with fresh sage.
How to make the bay leaf and sage syrup
- Break the bay leaf into pieces and put it in a pan together with the sage.
- Add the sugar and water to the contents of the pan. Heat over medium-high heat. Do not let it boil, as the sugar will caramelize and you will get a different flavor.
- Stir everything well until the sugar has completely dissolved. Let the syrup cool.
- Pour it through a fine sieve to remove the herbs and any undissolved sugar crystals.
- Store the syrup in a clean, sealed glass bottle in the refrigerator for up to
3 months.
