Recipe: Aperol Spritz sorbet

Aperol remains a classic as soon as the sun comes out. But why stop at a drink? We’ve already enjoyed cake with Aperol and slices of Aperol cheesecake, but this time we’re taking it to the next level with Aperol Spritz sorbet. Yep, it exists – and it’s just as delicious as it sounds.

What is Aperol Spritz sorbet?
Think of everything you love about that iconic Italian cocktail: the bittersweet taste of Aperol, the fresh fizz of Prosecco and a hint of citrus. Combine that with ice-cold sorbet and you’ve got the ultimate summer snack in your hands. Perfect for the patio, as a dessert after a BBQ or simply because you’re craving something truly refreshing.
Now, we all know that turning alcohol into sorbet by freezing it isn’t always easy, but if you follow these simple steps in the recipe – and have an ice cream maker – it should work 100%.
How to make Aperol sorbet
- Pour the Prosecco, sugar and sugar syrup into a saucepan and bring it to the boil. Stir meanwhile until the sugar has dissolved. Then let everything simmer gently for 10 minutes until it has reduced slightly.
- Remove the pan from the heat and add the sparkling water, orange juice, Aperol and lemon juice. Stir briefly and then let it cool completely. You can do this in a bowl of ice water, but it’s best to put it in the fridge overnight.
- Once it has cooled completely, pour the mixture into the ice cream maker and let it churn until it has a sorbet-like texture. The sorbet is ready. Place it in the freezer overnight to let it firm up completely before serving.

Tips & tricks
No ice cream maker? You can also place the mixture in the freezer and stir it with a fork every half hour. It will be slightly less airy, but still delicious. Feel free to experiment with extras such as mint leaves or pieces of orange for a fresh bite. Serve it in a beautiful glass with a slice of orange and, if desired, a splash of extra Prosecco for an ice-cold upgrade.
