Recipe: bananas in foil

When I see the words ‘banana’ and ‘rum’ in a recipe, I spontaneously start wagging my tail. Because I’m rather into rum, lately. In a cocktail, yes! But certainly also as an ingredient in a dessert. Like in this divine recipe by Heel Holland Bakt winner Rutger van den Broek. Let’s go bananas!

How to make the bananas in foil
- Preheat the oven to 200 ºC.
- Cut the bananas lengthwise on the inside, but make sure you don’t cut all the way through.
- Place each banana on a piece of aluminium foil.
- Pull the cut bananas open slightly and press the chocolate and pecans into the opening. Finally, drizzle the bananas with some rum.
- Wrap the bananas in the aluminium foil and place them in an oven dish with the cut side facing upwards.
- Bake the bananas for 25–35 minutes, until the peel is dark in colour and the inside is melted and soft.
- Serve the bananas warm.
Tips
- Serve the bananas with a scoop of vanilla or cinnamon ice cream.
- You can also fill the bananas with (mini) marshmallows and pieces of fudge.
