Recipe: banh mi

Ronald Giphart and his wife Mascha Lammes have long since moved past the days when they were young and unaware and made (and ate!) mashed potatoes with raw kale. They have been devoted to traveling and cooking together for years, and in this beautiful cookbook De wereld thuis they share recipes from their own family kitchen, inspired by dishes and ingredients from all over the world. ‘Banh mi is a crazy but oh-so-delicious sandwich from Vietnam. The thick layer of pâté spread on it is a reminder of the French colonial era, and the pickled vegetables on the banh mi are a wonderful replacement for the classic gherkins. The Vietnamese make a fluffy kind of baguette from rice flour. All attempts to recreate that bread at home have failed miserably, so we stick to an ordinary bread roll. How to make banh mi
- For the pickled vegetables, heat the vinegar and sugar in a saucepan until the sugar has dissolved, add a pinch of salt and leave to cool.
- Place the vegetables in a bowl, pour in the liquid and stir well.
- Refrigerate for at least 1 hour.
- For the nuoc cham, heat the water and sugar until the sugar has dissolved and leave to cool.
- Add the fish sauce, lemon juice, garlic clove and chili pepper.
- Refrigerate for at least 1 hour.
- Generously coat the pork belly slices with the char siu sauce (about half the jar) and marinate the meat in the refrigerator for 30 minutes.
- Fry the pork belly slices in a little oil over low heat for about 10 minutes, until cooked through and crispy.
- Cut the pork belly slices into quarters.
- Slice open the bread rolls and spread with the pâté and mayonnaise.
- Fill the rolls with the pork belly, pickled vegetables, cilantro and spring onions.
- Drizzle with nuoc cham to taste.
