Recipe: Juicy Lucy burger

Ronald Giphart and his wife Mascha Lammes are long past the days when they were young and clueless and made (and ate!) mashed potatoes with raw kale. They have been passionate about travelling and cooking together for years, and in this beautiful cookbook De wereld thuis they share recipes from their own family kitchen, inspired by dishes and ingredients from all over the world. Ronald wrote the stories, Mascha the recipes, and the result is a delicious book that proves there is culinary hope for everyone!

“Our youngest son is a fan of […] pointless videos on the internet in which people put dripping things in their mouths. One day, this brought him face to face with Juicy Lucy. Fortunately, this was a hamburger with dripping cheddar. He made it that same evening, and Lucy did indeed turn out to be very juicy!” says Giphart.

How to make the Juicy Lucy burger

  • In a large bowl, mix the minced meat with the garlic, Worcestershire sauce, paprika, barbecue sauce and mustard.
  • Season with pepper and a generous pinch of salt.
  • Divide the minced meat into eight equal balls.
  • Flatten four balls on cling film, and place the cheddar and jalapeños in the centre of the four burgers.
  • Flatten the other balls and place them on top of the burgers.
  • Press the edges together firmly, as the cheese must not drip out during grilling.
  • Place the four burgers in the fridge for at least 30 minutes.
  • Brush the burgers with oil.
  • Heat a grill pan or barbecue and cook the burgers on both sides for approximately 4 minutes, until done.
  • Meanwhile, cut the buns open and toast the cut sides until crisp.
  • Top the buns with lettuce, burger, lettuce, tomato, pickle, onion and sauce of your choice.
