Recipe: banoffee baked oats

Kind of like banana bread, but different: these banoffee baked oats are absolutely delicious. And pretty healthy too.

Banana bread. As far as we’re concerned, this remains a winner. It is a little deceptive, because it sounds healthy, but in many cases it’s simply a delicious sweet cake. And with the amount of butter we add (and a tip: a splash of rum), the word ‘healthy’ really no longer applies to banana bread. In fact, these banoffee baked oats are healthier. And you can make them in no time.
How to make banoffee baked oats
- Preheat the oven to 180 °C.
- Peel the bananas and cut them into pieces.
- Put half of the banana, the oats, milk, baking powder and a pinch of salt in the food processor and blend until smooth.
- Add the remaining banana, walnuts and sprinkles and blend briefly until you have a coarse batter.
- Spoon the batter into the baking dish and bake in the oven for 15 minutes. Drizzle the banoffee baked oats with the maple syrup.
Tip: Don’t have any maple syrup at home? You can replace it with honey!
