Recipe: brioche tompouce

Do you remember the frikanpouce and all the other tompouce variations we were inundated with last year? After the tompouce craze of 2023, we were quite done with everything tompouce for a while. But a tompouce remains an irresistible pastry. And honestly: a brioche tompouce really is a case of 1+1=3. So of course we had to share this recipe with you. Give it a try!

Because tompouce with brioche is so much tastier than with puff pastry.
How to make brioche tompouce
- Halve the vanilla pod lengthwise and scrape out the seeds. Mix the seeds and the pod with the milk in a saucepan. Bring to the boil, reduce the heat and let it infuse for 5 minutes.
- Whisk the egg yolk with the sugar and cornstarch in a bowl until smooth. Remove the vanilla pod from the milk and slowly pour the milk into the egg mixture while whisking. Pour the mixture back into the saucepan and heat over low heat, whisking, until it thickens into custard.
- Pour the custard into a deep plate and place some cling film directly on the custard to prevent a skin from forming. Let the custard cool completely in the refrigerator.
- Purée half of the raspberries with an immersion blender and push the purée through a sieve to remove the seeds. Stir the icing sugar into the raspberry purée until smooth.
- Spread a layer of pastry cream over 2 slices of brioche. Cover with the remaining slices of brioche and pour the raspberry glaze over them.
