Recipe: Börek with chorizo

How to make börek with chorizo, goat’s cheese and cumin
- Preheat the oven to 200 °C.
- Grind the pieces of chorizo as finely as possible in a food processor. Put them in a bowl, add the cumin seeds and goat’s cheese, and mix everything evenly.
- Grease the base of a round ovenproof dish or cake tin with a diameter of 24 cm with a little vegetable oil. Place 1 filo pastry sheet lengthwise in it and let the ends hang over the edge. Place another sheet across it, widthwise. Divide the chorizo filling in half. Spoon one half onto the pastry base and smooth the top so that the base is evenly covered. Fold a third filo pastry sheet in half to make it twice as thick and place it on the filling. Repeat this with another filo pastry sheet to create a thick middle layer. Brush the pastry with the milk or water and spoon the remaining filling on top. Press and push it into place to cover the pastry layer evenly.
- Fold the overhanging pastry over the filling. Gently crumple the 2 remaining pastry sheets and place them on top.
- Brush the pastry and edges with the beaten egg and sprinkle with the nigella seeds. Bake the börek for 25 to 30 minutes until beautifully golden brown and serve immediately.
