Recipe: celeriac baked in sage, rosemary and garlic

We’re real foodies in the editorial department. We enjoy (almost) everything and although we don’t renounce meat or fish, we really do love vegetables. So it’s always great when a new cookbook full of the most delicious vegetarian dishes appears. Evergreen by Scandinavian chef Mikkel Karstad is packed with simple and quick, as well as somewhat more elaborate, mouth-watering dishes. His celeriac baked in sage, rosemary and garlic is highly recommended!

How to make the baked celeriac
- Peel the celeriac, but not too thickly, and leave some of the leaves attached. Wash the celeriac thoroughly, especially since some soil may be hidden among the leaves.
- Put 40 grams of butter, the whole garlic cloves, the sage and rosemary in a pan and let the butter foam. Add the celeriac and fry them over low heat in the butter and herbs. Keep turning the celeriac so that the roots develop a beautiful golden-brown crust on all sides while absorbing the flavour of the butter and herbs. Fry the celeriac for a total of 15–20 minutes, until tender but still firm. Be careful not to let the butter become too brown and burn during frying, as it will turn bitter.
- Add the last bit of butter and let it foam around the celeriac in the pan.
- Peel the shallots and cut them into thin rings. Whisk the vinegar, honey and oil into a dressing and season with salt and freshly ground pepper.
- Put the shallot, walnuts and capers in the dressing and stir well. Then thoroughly mix the browned butter from the celeriac into the dressing.
- Cut the celeriac in half, place the halves on plates or a serving dish and pour the dressing over them. Season with some extra salt and freshly ground pepper if desired.
- Serve immediately, while both the celeriac and the dressing are still warm; otherwise, the butter may start to clump if the dressing becomes too cold. Serve the dish with some good bread.
