Beer in pies or cakes may sound strange, but it works better than you might think. Beer makes the batter light and airy and full of flavor. The cake does not really get a true beer flavor, but you can definitely taste the fruity Liefmans flavor in it.
How to make the chocolate cake with Liefmans
- Preheat the oven to 180 degrees and cover an 18 cm springform pan with baking paper.
- In a stand mixer, mix the softened butter with the brown sugar until light and fluffy. Add the eggs one at a time: let the egg become fully incorporated into the mixture before adding the second one.
- Meanwhile, sift the flour with the cocoa, yeast and bicarbonate of soda, then add it to the mixture with the eggs and butter. Add the beer and mix everything well.
- Whip the cream and set it aside.
- Pour the mixture into the baking pan and place it in the hot oven for one hour.
- As soon as the cake is baked, let it cool in the pan and place it on a cooling rack.
- Meanwhile, prepare the frosting. Mix the softened butter with the Philadelphia cream cheese. Add the vanilla extract and powdered sugar until you have a thick cream. Fold it together with the whipped cream.
- Spread the cream over the surface of the cake. Refrigerate it for an hour before serving.
