Recipe: divine creamy KitKat-Rolo cake

A creamy cake with KitKat, Rolo, a light sponge base, white chocolate spread and another layer of melted chocolate on top: sounds divine, and believe us: it is.

A classic sponge cake is of course a true Heel Holland Bakt classic that you can easily make yourself with this basic recipe from HHB judge and master pastry chef Robért van Beckhoven. Would you rather take the easy route? Then you can also use instant sponge mix from the supermarket.
How to make the KitKat-Rolo cake
- Preheat the oven to 160 °C.
- Prepare the sponge mix into a batter. The packaging states how to prepare the batter and which ingredients you need.
- Pour the batter into a greased springform pan lined with baking paper and bake the sponge cake according to the instructions on the packaging.
- Meanwhile, whip the cream with the vanilla sugar.
- In another bowl, beat the cream cheese together with the white chocolate spread until creamy, then mix it with the whipped cream. Place the mixture in the refrigerator for half an hour.
- Once the sponge has baked in the oven, let the cake cool completely for an hour. Then cut the sponge cake horizontally through the middle, so you have two flat halves and can fill the cake.
- Chop half a roll of Rolo and 1 bar of KitKat into small pieces.
- Take 1/3 of the cream cheese mixture and mix the KitKat and Rolo pieces into it. Spoon this onto one half of the sponge cake and place the other half of the sponge on top.
- Use a spatula to cover the entire outside of the cake with the remaining cream cheese mixture. Set aside 3 tablespoons! Then place the cake in the refrigerator for another half hour to firm up.
- Then melt 200 grams of milk chocolate in the microwave or au bain-marie. Pour it slowly over the cake. You will see that the chocolate runs down the sides, creating a fun effect!
- Take a piping bag and put the 3 remaining tablespoons of cream cheese mixture into it. Pipe rosettes onto the cake and press a Rolo onto each rosette.
- Chop the remaining KitKat into pieces and sprinkle them over the center of the cake.
