Home bakers will recognize this: good bread dough contains as much moisture as possible, but not so much that the dough turns into soup. The downside of that perfect dough is its stickiness. It sticks to your fingers and to everything you touch afterward. How do you wash the dough off your fingers? Touch the tap: now there’s dough on it. Grab a cloth: boom, dough. Your sink gets clogged with dough. And while you can get the big clumps off your hands with a dough scraper, even that really doesn’t leave you completely dough-free.

Here’s the solution: flour. What? Yes, Serious Eats reveals this incredible dough tip. The food journalist learned it from Eric Kayser, the genius behind Maison Kayser, a famous American artisanal bakery. He didn’t wipe his sticky fingers on his apron or a kitchen towel, but grabbed a handful of flour and rubbed it through his hands as if it were soap. And voilà, the sticky dough was gone.
No longer sticky
And it works: the dough becomes crumbly and comes off quickly. How is that possible? Flour absorbs the moisture from the dough. Once the dough is no longer as moist, it’s no longer sticky either. Done? Then you can simply rinse your hands under the tap, and slide the dry bits of dough straight into the trash with the dough scraper.
