Recipe: coffee butter

Short night? Rough morning? Solution: toasted bread with a thick layer of coffee butter. Yes, you read that right: coffee plus butter is coffee butter.

Of course, you don’t make this coffee butter à la minute, but in advance. Luckily, you can keep it in the refrigerator for at least ten days.
How to make coffee butter
- Take the butter out of the refrigerator so it can come to room temperature.
- First, make coffee syrup: heat the heavy cream, sugar, oil and instant coffee with a little salt in a small saucepan. Stir until the sugar and coffee have dissolved completely. Then let it cool.
- Beat the butter until light and fluffy. Then, while mixing, gradually add the coffee syrup. Keep mixing until everything is well combined. Transfer to a container or jar, cover and place in the refrigerator. Let the butter soften slightly at room temperature before eating it; it will spread more easily.
Coffee as a flavour enhancer
Coffee is an important flavour enhancer in any case. In the form of powder or extract in, for example, desserts (of course, we only need two words for that: espresso martini!), in smoothies and in bars. Try making this coffee butter, or add a splash of strong coffee to the sauce of the tastiest chili con carne. Absolutely delicious; it gives this (and other hearty South American recipes) a robust depth of flavour.
