Recipe: Creamy lemon pasta with asparagus and peas

How to make creamy lemon pasta with asparagus and peas
- Bring a large pan of generously salted water to the boil. Add the pasta to the boiling water and cook according to the instructions on the package until al dente. Usually, this is 1 minute less than indicated. Scoop out a cup of the cooking water before draining the pasta.
- Meanwhile, finely chop the garlic. Heat a generous splash of olive oil in a large frying pan with high sides. Fry the garlic for 1 minute. Grate the zest of the three lemons over the pan and add chilli flakes to taste. Also add the juice of two of the lemons (keep the third lemon to add extra juice later if needed).
- Remove the tough bottom part of the asparagus (about 3 cm) and cut them into thirds. Add the asparagus to the lemon in the frying pan and fry for 6 minutes. Add the frozen peas and fry for another 3 minutes, until hot.
- Grate the Parmesan into a bowl and stir in the egg yolks, cooking cream and plenty of black pepper. 5 Stir the reserved pasta water into the asparagus in the frying pan. Also add the pasta and toss thoroughly so that all the pasta glistens.
- Turn the heat to low and pour in the cream-and-egg mixture. Keep stirring until you have a lovely creamy sauce. Time to taste. Not lemony enough? Add a little more juice.
- After serving, finish the pasta with pine nuts, rocket and/or extra Parmesan, if desired
Tip: Wondering why your pasta dishes at home never taste as good as they do in Italian restaurants? There’s a good chance you’re not adding enough salt to your pasta water. The effect of cooking pasta in well-salted water cannot be achieved by sprinkling salt over it afterwards. The water should be as salty as the sea, so don’t be stingy.
