Recipe: crispy, gooey waffle grilled cheese

We recently made banana bread waffles, and now we have a great recipe for the cheese lovers among us: a waffle grilled cheese.

In principle, a waffle iron and a sandwich press don’t differ much from each other, except for the shape and depth of the irons. And those are exactly what ensure that you get plenty of those wonderfully crispy cheese pieces on the outside and cheese so soft on the inside that you can make the most beautiful ‘cheese pull’. How to make the waffle grilled cheese:
- Mix the mayonnaise and butter in a small bowl.
- Spread the mayo-butter mixture on one side of the slices of bread.
- Turn the slices over (so the spread side is on the bottom) and top them with the cheeses. First the Gouda, then the Monterey Jack and then the Cheddar.
- Place the other slice of bread on top, with the mayo-butter side facing up.
- Heat your waffle iron to medium heat and grease it with the cooking spray.
- Place your sandwich inside, close the iron and cook it until the cheese has melted and the bread is golden brown. About 3 minutes. Enjoy!
