Recipe: Drunken Oranges

The Mediterranean cuisine is said to be one of the healthiest in the world. How is that possible? Olive oil expert Wilma van Grinsven-Padberg unravels that in her new cookbook The Mediterranean Diet. And deliciously so: she also immediately shares a number of delicious Mediterranean recipes, such as these drunken oranges from Portugal.

It doesn’t matter for this recipe whether you use eating or juicing oranges, but try to buy organic oranges in any case. If you can’t, scrub the oranges thoroughly first to remove the wax coating.
How to make drunken oranges
- Make the syrup. Using a ‘cannelé knife’, remove some strips of peel from the 4 oranges.
- Blanch these in boiling water first to remove the bitterness. Then cook them in sugar water until they form a thin, syrup-like substance. Then add some alcohol.
- Remove all the peel from the oranges and cut them into beautiful slices.
- Sprinkle a handful of olives over them.
- Drizzle with the orange-peel and olive-oil sauce. Chill before serving.
