Recipe: easy quesadillas with leftover tomato sauce

Tomato sauce left over from the last time you made pasta marinara, or pasta with tomato sauce? Don’t throw it away, of course! Freezing it is always a good idea for next time, but do you know what else you can do with it?

Use it as a dipping sauce for amazing homemade garlic cheese sticks, for example! Or take the deliciously ‘fusion’ route and make this super-easy cross between a quesadilla and a pizza.
Super simple
You can really make this in no time. If you have a frying pan, a few tortilla wraps, some delicious mozzarella or another good melting cheese, and some leftover vegetables, you’re ready to go! Plus that leftover tomato sauce, of course…
How to make the Italian quesadilla
- Spread a tortilla wrap with the tomato sauce, tear half a ball of mozzarella over it, add some grilled vegetables of your choice, and, if you like, some thin slices of Italian charcuterie.
- Fold the tortilla in half and carefully slide it into a frying pan that you’ve placed over medium heat with a little olive oil.
- Fry until golden brown and crispy on one side, then carefully turn it over with a spatula.
- Fry the other side until golden brown too.
- If you happen to have a large frying pan, you might be able to make two at the same time—now that’s a proper feast!
There you go
Serve with a bowl of the leftover sauce for extra dipping, if you still have sauce left. Add a cold drink and you’re doing great again—not wasting a thing, either!
