This mozzarella is tastier than the Italian kind

Delicious, that soft cheese with its creamy flavor and stringy texture: real Italian buffalo mozzarella. But that famous cheese will soon have competition from its Dutch brother, because a young couple has started a buffalo farm in Amstelveen. The goal: to make buffalo mozzarella that’s even tastier than the Italian kind.

Water buffaloes? In Amstelveen? Yes, it’s possible, farmers Emma and Oliver explain. Buffaloes are climate-friendly because they eat considerably less concentrated feed than regular cows and emit less CO2. They also produce less milk, but it’s the perfect milk for making cheese.

Sixteen buffaloes

Emma and Olivier started their farm, Boer ’n Buffel, in the Bovenkerkerpolder, on the southern side of Amstelveen. There are now sixteen buffaloes grazing there, and the couple would like to expand to fifty buffaloes. The animals look impressive, with their jet-black hair and large horns, but according to the farmers, they are big softies. Their farm has a large pond where the buffaloes can splash around.

Burrata and mozzarella

This spring, the first mozzarella from the Amstelveen farm will be available for sale, and burrata is also being made. Tastier than the Italian kind, the farmers say. Emma: ‘The buffaloes get to spend plenty of time outdoors, playing in the water and mud. And that isn’t the case with Italian mozzarella.’
