Recipe: Eton Mess tower

Eton Mess is the reigning champion of British desserts. Much easier than a pavlova, but at least as delicious. Don’t skimp on the fruit. The way it is served is inspired by the flamboyant ‘tumble’ served at London restaurant Quo Vadis, but you can present this dessert in any way you like.

How to make an Eton Mess tower

  • Remove the tops from the strawberries and quarter them. Add them to a bowl with the other fruit and toss everything with the lemon juice and caster sugar. Set aside.
  • Whip the cream, icing sugar and vanilla in a large bowl with a hand mixer until soft peaks form.
  • Break the meringues in half and stack them in a pyramid on a large serving platter, spooning the whipped cream, sorbet and fruit in between. Imagine that this is the cement holding everything together. Garnish with a few flowers, if desired, and serve.

Prepare in advance
All the components of this dessert can be prepared in advance and stacked just before serving.

Alternatives
I chose red fruit, such as strawberries and raspberries, but a tropical mix of mango, passion fruit and papaya, flavoured with lime juice, is also delicious.
